Ingredients

1.5 kg frozen shrimp

½ green chili

2 limes

1 orange

1 lemon

1 spring onion

1 bunch of parsley

½ red bell pepper

1 garlic clove

1 tablespoon honey

Directions

Step 1

First, make the marinade. Wash the citrus fruits and grate the zest using a grater. Squeeze out the juice. Chop the remaining vegetables into small pieces. Chop the parsley. Mix everything together.  Season with pepper and salt to taste. Set aside while you peel the shrimp.

Step 2

Once the shrimp are peeled, mix them with the marinade and chill the mixture. It's best to do this a day in advance so the flavors can meld properly.

Step 3

Serve on good bread/sliced bread with seaweed butter and a dollop of mayonnaise.
